If thinner consistency is desired, add more buttermilk.  Stir in cheese &#038; pepper.  Cover and refrigerate.<\/p>\n<p><i>Note:  This works out to about 15-20 calories per T., depending on how much buttermilk you add.  I made double the recipe, blending in 1\/4 C. blue cheese with the cottage cheese to give more flavor throughout  I still thought it was a little bland so I tossed in about 1\/2 T. white wine vinegar, some garlic powder, extra pepper, and some chopped parsley and it was better.  <\/i><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Admittedly, this isn&#8217;t Marie&#8217;s Chunky Blue Cheese dressing, but it isn&#8217;t 70 calories of pure fat in every tablespoon either.  It tastes an arm and a leg better than commercial light bleu cheese dressings, in my opinion anyway, and is still fewer calories than most of those.
