Dry Black Beans<br \/>\n6 C. Water<br \/>\n3 T. Olive Oil<br \/>\n2 Onions, chopped<br \/>\n3 Cloves Garlic, chopped<br \/>\n6 stalks celery, with leaves, chopped<br \/>\n2 C. Water<br \/>\n8 C. Chicken Stock<br \/>\n1\/2 tsp. Cayenne Pepper<br \/>\n1 1\/2 tsp. Cumin<br \/>\n2 T. Balsamic Vinegar<br \/>\n1\/4 C. Sherry<br \/>\n1 T. Soy Sauce<br \/>\n1\/2 tsp. Pepper<br \/>\n1\/4 C. Sour Cream<\/p>\n<p>In a medium-size stock pot, add dried black beans and 6 cups of water, cover and let soak overnight.  In another large stock pot, heat olive oil and add onion, minced garlic and chopped celery. Saut\u00e9 until vegetables are softened.  Drain and rinse soaked black beans. Add pre-soaked beans or drained and rinsed canned beans to vegetable mixture along with 2 cups water and broth. Bring to boil; reduce heat and simmer.   Add cayenne pepper and ground cumin. Partially cover the pot and simmer over low heat for 2 to 2 1\/2 hours, or until beans are soft.  Puree soup in batches in food processor or blender. Return pureed soup to stock pot and simmer.  Add vinegar, sherry, soy sauce and pepper. Serve hot with a dollop of sour cream or yogurt and chopped green onions.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This ends up being a very thin soup when you use canned beans, since the beans don&#8217;t&#8217; take up much of the liquid.  Good taste, but thin, rather brothy.  If you want it thicker, use less stock\/water.  It tasted fine though, and with a good sized spoonful of chunky salsa along with the dollop of light sour cream and the green onion, it was tasty and filling.
