Flour &#8211; any kind<br \/>\n1 tsp salt<br \/>\nDry herbs, your choice (I used parsely, rosemary and thyme) About 1 1\/2 tsp dry each<\/p>\n<p>Add yeast to warm water in a bowl.  Let stand until foamy, about 5 minutes.  Combine the flour, salt and herbs in a large mixing bowl.  Make a &#8220;well&#8221; in the middle of the flour mix and pour the water\/yeast mixture into the well.  Stir until dough can be gathered into a ball.  Knead dough until smooth.  Place dough in a large, lightly oiled bowl.  Cover with a damp towel (or plastic wrap) and place in a dry, draft-free place until dough has doubled in size, approximately 1 to 2 hours.  PUnch down dough and place on a lightly floured surface.  Divide dough into 12-18 equal pieces.  Roll into circles.  Heating a non-stick fry pan to medium high, quickly &#8220;dry fry&#8221; them 1 to 2 minutes on each side.  (Dough will get bubbly, don&#8217;t turn the first side until you see bubbles form.)
