{"id":10825,"date":"2013-09-10T22:02:49","date_gmt":"2013-09-11T05:02:49","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=10825"},"modified":"2013-11-10T22:03:23","modified_gmt":"2013-11-11T05:03:23","slug":"chicken-curry-in-a-hurry","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=10825","title":{"rendered":"Chicken Curry in a Hurry"},"content":{"rendered":"<div>\n<p>For spicy rice:<\/p>\n<\/div>\n<p>1 tsp. each coriander seeds, cumin seeds, mustard seeds<\/p>\n<p>2 C. basmati rice, prepared according to package directions<\/p>\n<p>3 T. vegetable or canola oil, 3 turns of the pan<\/p>\n<p>1 1\/3 to 1 1\/2 pounds chicken breast tenders, diced<\/p>\n<p>2 to 4 cloves garlic, minced, mild to extra spicy<\/p>\n<p>1 to 2 inches fresh ginger root, minced or grated, mild to extra spicy<\/p>\n<p>1 large yellow skinned onion, peeled and chopped<\/p>\n<p>1 can chicken broth, about 2 C.<\/p>\n<p>2 T. curry paste, mild or hot<\/p>\n<p>1\/3 to 1\/2 C. mincemeat<\/p>\n<p>Coarse salt<\/p>\n<p>2 T. flour<\/p>\n<p>&nbsp;<\/p>\n<p>Toppings and garnishes, mix and match:<\/p>\n<p>4 scallions, chopped<\/p>\n<p>1 C. toasted coconut<\/p>\n<p>1\/2 C. sliced almonds or Spanish peanuts<\/p>\n<p>1 C. prepared mango chutney<\/p>\n<p>1 \/4 C. finely chopped cilantro leaves<\/p>\n<p>&nbsp;<\/p>\n<p>Prepare rice to package directions. For spicy rice, toast coriander, cumin and mustard seeds in the bottom of a medium saucepan in 1 T. of extra-virgin olive oil. When seeds pop and you can smell seasonings, add water and prepare rice as directed.\u00c2\u00a0 Heat 2 T. of extra-virgin olive oil in a large, deep nonstick skillet over medium high heat. Add chicken and lightly brown. Remove chicken. To same pan, add garlic, ginger and onions and saut\u00c3\u00a9 together for 3 to 5 minutes. Add flour and cook 1 to 2 minutes. Add chicken broth to the pan and bring to a bubble. Add curry paste and mincemeat and reduce heat to medium low. Add chicken pieces back to the pan. Taste and add a little salt, if you feel it necessary. Simmer curry 5 to 10 minutes.\u00c2\u00a0 Assemble your toppings in small dishes. Serve curry in shallow bowls with scoops of rice or spiced Basmati.
