(about 2 ounces) chopped prosciutto<\/p>\n<p>2 ounces chopped mushrooms<\/p>\n<p>6 large eggs<\/p>\n<p>1 T. dry white wine<\/p>\n<p>1 T. chopped fresh basil or 1\/2 tsp. dried basil<\/p>\n<p>3 T. chopped parsley<\/p>\n<p>Freshly ground pepper<\/p>\n<p>1\/4 C. grated Mozzarella cheese<\/p>\n<p>In a large ovenproof skillet over medium heat, melt butter. Add onions, prosciutto and mushrooms and saut\u00c3\u00a9 until prosciutto is crisp and vegetables are tender, about 5 minutes. Preheat broiler. In a bowl, whisk together eggs, wine, basil, parsley and pepper to taste. Pour egg mixture over vegetable-prosciutto mixture. Reduce heat to medium-low, cover, and cook until eggs are set and top is almost dry, 10 to 12 minutes. Sprinkle with Mozzarella cheese. Broil until puffy and cheese is melted, about 1 minute.
