{"id":10010,"date":"2013-02-24T05:18:00","date_gmt":"2013-02-24T12:18:00","guid":{"rendered":"https:\/\/pcgirl.net\/recipes\/?p=10010"},"modified":"2013-03-11T05:19:34","modified_gmt":"2013-03-11T12:19:34","slug":"grilled-eggplant-with-pistachios-and-mint-salsa","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/recipes\/?p=10010","title":{"rendered":"Grilled Eggplant with Pistachios and Mint Salsa"},"content":{"rendered":"<div>\n<p>&nbsp;<\/p>\n<\/div>\n<p>12 small eggplants, 3-4 inches long<\/p>\n<p>salt<\/p>\n<p>Cut the eggplant in half lengthwise, sprinkle liberally with salt and let drain in a colander for 30 minutes.<\/p>\n<p>1\/2 C. shelled pistachio kernels<\/p>\n<p>1\/2 C. loosely packed mint leaves<\/p>\n<p>1\/2 C. loosely packed parsley leaves<\/p>\n<p>1 clove garlic, coarsely chopped<\/p>\n<p>2 scallions, coarsely chopped<\/p>\n<p>3\/4 C. virgin olive oil<\/p>\n<p>2 T. white wine vinegar<\/p>\n<p>1\/4 tsp. sugar<\/p>\n<p>Salt and freshly ground pepper<\/p>\n<p>&nbsp;<\/p>\n<p>Blend the nuts, mint, parsley, garlic and scallions to form a fairly smooth paste. Stir in rest of ingredients and let stand. Wash the eggplants thoroughly, dry well, brush with oil, and place under a broiler for 4-5 minutes until skins blister and char.
