\u00c2\u00a0sinful amounts of produce, freezer burnt\u00c2\u00a0foods, even occasionally meat\u00c2\u00a0in the fridge I&#8217;ve bought\u00c2\u00a0and then don&#8217;t end up cooking for too long so it&#8217;s trash.\u00c2\u00a0 Menu planning also helps me eat much healthier, so it&#8217;s back to meal planning for me.\u00c2\u00a0 If I get stuck, I&#8217;ll take inspiration from one of the many posters over at Organizing Junkie, who hosts <a href=\"http:\/\/orgjunkie.com\/2009\/09\/menu-plan-monday-sept-14th.html\">Menu Plan Monday<\/a>.\u00c2\u00a0 For the next month it&#8217;s my goal to use up as much pantry and freezer items as possible.\u00c2\u00a0 We&#8217;ve got basically a quarter beef in the deep freeze and\u00c2\u00a0some\u00c2\u00a0wild salmon fished up by a friend, so I&#8217;m not spending as much as it seems \ud83d\ude09<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/orgjunkie.com\/menu-plan-monday\"><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-295   alignnone\" title=\"Menu Plan Monday\" src=\"https:\/\/pcgirl.net\/blog\/wp-content\/uploads\/2009\/09\/bbqmpmbutton.jpg\" alt=\"\" width=\"309\" height=\"141\" srcset=\"https:\/\/pcgirl.net\/blog\/wp-content\/uploads\/2009\/09\/bbqmpmbutton.jpg 309w, https:\/\/pcgirl.net\/blog\/wp-content\/uploads\/2009\/09\/bbqmpmbutton-300x136.jpg 300w\" sizes=\"(max-width: 309px) 100vw, 309px\" \/><\/a><\/p>\n<p style=\"text-align: left;\">For breakfasts\u00c2\u00a0we\u00c2\u00a0always\u00c2\u00a0have oatmeal,\u00c2\u00a0cold cereal, scrambled eggs, toast, freezer muffins, yogurt, cottage cheese and fruits to choose from.\u00c2\u00a0 This week we also have a mexican zucchini frittata, and some raisin bread.\u00c2\u00a0 Any dinner lefovers become lunch, but I&#8217;m trying very hard to NOT overcook and have leftovers unless I have specifically planned leftovers.\u00c2\u00a0 I also have a small budget specifically for lunches, taken from what hubby was spending\u00c2\u00a0eating out every day,\u00c2\u00a0to keep us stocked with lunch meats, cheeses, etc for bentos. \u00c2\u00a0My lunches this week are taco soup (4x), chicken salad on greens\u00c2\u00a0(2x), and veggie ramen stir fry (1x).\u00c2\u00a0 Even when not specifically listed, I usually have\u00c2\u00a0a mixed greens salad and fruit available for dinner.<\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">Monday: <span style=\"text-decoration: line-through;\">Mini Calzones, Green Salad with yellow Grape Tomatoes, Pineapple <\/span>Oops, I forgot that today is the back to school PTA picnic and meeting.\u00c2\u00a0 We&#8217;ll be having pizza there<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">Tuesday: <a href=\"http:\/\/www.wchstv.com\/gmarecipes\/roastchickenwit.shtml\">Roast Lemon Chicken<\/a> and Roasted Root Vegetables (Sweet Potato, Carrot, Onion, Turnip), Cauliflower (planned leftovers for Thursday and Friday meals)<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">Wednesday: <a href=\"https:\/\/pcgirl.net\/recipes\/?p=3382\">Salmon Cakes<\/a> and Lemon-Garlic Aoili, Lentils, Asparagus<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">Thursday: <a href=\"http:\/\/www.parentsconnect.com\/dishes\/dish_1226515293291.jhtml\">Chicken Curry<\/a>\u00c2\u00a0(I&#8217;m using shredded leftover chicken, not cubed breasts),\u00c2\u00a0Brown Rice, Zucchini &amp; Summer Squash<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">Friday: <a href=\"http:\/\/www.foodnetwork.com\/recipes\/creamy-spicy-corn-chowder-with-chicken-recipe\/index.html\">Chicken and Corn Chowder<\/a>, Whole Wheat Rolls, Tri-Melon Salad<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">Saturday: <a href=\"http:\/\/allrecipes.com\/Recipe\/Sorta-Salisbury-Steak\/Detail.aspx\">Sorta Salisbury Steak<\/a>\u00c2\u00a0(I&#8217;m adding mushrooms to the gravy), Mashed Potato, Broccoli &amp; Cauliflower<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">Sunday: Roasted Salmon with <a href=\"https:\/\/pcgirl.net\/recipes\/?p=3385\">Chili-Lime Sauce<\/a>, Barley, Green Beans<\/span><\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\">\u00c2\u00a0<\/p>\n<p class=\"MsoNoSpacing\" style=\"margin: 0in 0in 0pt;\"><span style=\"font-family: Calibri; font-size: small;\">Update: Thursday and I am doing well and on track.\u00c2\u00a0 I&#8217;m under budget for the week (which is easily the first time in months).\u00c2\u00a0 I&#8217;ve made some adjustments (like when DH wasn&#8217;t going to be home for dinner, which I didn&#8217;t know until the day of &#8211;
