{"id":2697,"date":"2014-07-25T12:57:44","date_gmt":"2014-07-25T19:57:44","guid":{"rendered":"https:\/\/pcgirl.net\/blog\/?p=2697"},"modified":"2014-07-24T20:36:38","modified_gmt":"2014-07-25T03:36:38","slug":"so-called-greek-relish","status":"publish","type":"post","link":"https:\/\/pcgirl.net\/blog\/?p=2697","title":{"rendered":"so called &#8220;Greek Relish&#8221;"},"content":{"rendered":"<p>Yesterday I made a tasty (ugly looking, so no pictures!) &#8220;relish&#8221; to go with our baked chicken thighs.\u00c2\u00a0 e-meals calls it &#8220;Greek Relish&#8221;; I don&#8217;t think it seemed particularly Greek.\u00c2\u00a0 No lemon, no oregano, no feta cheese, no thyme.\u00c2\u00a0 Below is the recipe as presented.\u00c2\u00a0 It was intended to be served over deli roast chicken, sliced in the menu they provided.<\/p>\n<blockquote>\n<p style=\"margin: 0in 0in 0pt;\"><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">\u00e2\u20ac\u0153Greek Relish\u00e2\u20ac\u009d<\/span><\/p>\n<p style=\"margin: 0in 0in 0pt;\"><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">\u00c2\u00a0<\/span><\/p>\n<p style=\"margin: 0in 0in 0pt;\"><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">2 tablespoons olive oil<\/span><\/p>\n<p style=\"margin: 0in 0in 0pt;\"><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">1\/4 cup finely chopped red onion<\/span><\/p>\n<p style=\"margin: 0in 0in 0pt;\"><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">2 tomatoes, chopped<\/span><\/p>\n<p style=\"margin: 0in 0in 0pt;\"><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">1 (12-oz) jar marinated artichoke hearts, drained and chopped<\/span><\/p>\n<p style=\"margin: 0in 0in 0pt;\"><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">1 (7-oz) jar roasted red bell peppers, drained and chopped<\/span><\/p>\n<p style=\"margin: 0in 0in 0pt;\"><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">1\/2 cup chopped pitted kalamata olives<\/span><\/p>\n<p style=\"margin: 0in 0in 0pt;\"><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">\u00c2\u00a0<\/span><\/p>\n<p style=\"margin: 0in 0in 0pt;\"><span style=\"color: #000000; font-family: Calibri; font-size: medium;\">Heat oil in a skillet over medium heat; add onion.
